Silexus Sézannensis Blanc de blancs

« Grand vin des Coteaux du Sézannais »

In the vineyards of Chatet, close to Saudoy, you will find quite some pieces of silex. That’s very rare and their presence has a great influence on grape ripening. At daytime the stones are heated up by the sun, giving warmth to the vines at night.

This wine has power and finesse. In the nose you will find flower and citrus aromas, as well as the sweet smell of ripe melons and apples. On the palate, it’s full-bodied, with a high density of fine bubbles. Besides its fruitiness, this wine has something wild with its character. Something that will remind you of stony soils, spices and white pepper. We prefer to savour it in white wine glasses rather than in champagne flutes, in order to give this wine the space to develop. You should open the bottle half an hour before tasting or even decant it.

Due to the power of its taste and flavors, this wine neither fears crayfish and lobster nor cheese with a strong character like Mont d’Or or Soumaintrain.

Terroir: Soil rich in silex in the Sézannais.
Fermented in steel tanks, malo-lactic fermentation done.
Harvest: 2011
Ageing: 5 years on fine lees.
Dosage: 5 g/L - Extra Brut
